Recipes
Thursday night meditation is always followed by a Dharma talk with tea and cookies.  Joy Kelly, wife of our founder and teacher, Shoshin Bob Kelly, baked cookies for us for many years.  We bow to her with deep gratitude and affection.  Here are a few favorites from her kitchen.

 "Bob's" Basic Bread Recipe
"I taught him everything he knows about baking bread....."  Joy

The sponge:   
  • 3 cups of lukewarm water
  • 1 1/2 tablespoons of dry yeast
  • 1/4 c. honey or other sweetening
  • 1 cup dry milk (optional)
  • 4 cups whole wheat flour
  • Let sponge rise for 45 minutes
Mix into sponge:
  • 4 tsp salt
  • 1/3 cup oil
  • 3 cups of whole wheat or white bread flour
 Knead until smooth and elastic:
  • 1 cup additional white flour will be used during kneading.  
  • Bake 45 minutes at 350º
Note:  Bob and Joy always ground their own wheat for breadmaking.  They had a wheat grinder in the basement. 

Bob's Focaccia 

  • 1 1/8 cups of luke warm water
  • 1 TBSP olive oil
  • 1 TBSP sugar
  • 1/2 tsp salt
  • 3 cups bread flour
  • 1 1/2 tsp fast acting yeast
Press into a jelly roll pan (a cookie sheet with sides) Bake 20 min.
  • You can oil and sprinkle with fresh or dried herbs midway in the baking for simple focaccia (good for sandwiches) 
or 
Make it pizza:
Bake above for the first 10 minutes, then quickly  spread the dough with tomato paste, dust it with italian herbs and sprinkle cooked ground sausage, or other ground meat, cheese, vegetables, and return to the oven for the last 10 minutes. 

Note:  The house smelled so good when pizza was on the menu.  There was always a meal along with Sunday afternoon sewing and dharma!  Kitchen table Zen!   Taiju
Joy's Sesame Seed Cookies
  • 3/4 c. honey (or 1 c. brown sugar)
  • 1/2 c. oil (plus 1/4tsp sesame oil)
  • 2 eggs, beaten
  • 1/4 tsp. salt
  • 1 c. sesame seeds, toasted
  • 1 tsp. cumin seeds, crushed
  • Rind of 1 orange, finely grated
  • 1 1/2 c. whole wheat flour
The cookie "dough" is really more like a thick batter.  It will spread out on the cookie sheet as it bakes.

Bake 8 minutes at 350-375 degrees.

 Joy's Molasses Cookies
  • 1 1/2 c.  shortening, melted and cooled (butter does not work well for this recipe as it will not give the traditional crinkly look)
  • 2 c.   sugar
  • 1/2 c.  molasses
  • 2  eggs
  • 4 c. flour
  • 4 tsp. baking soda
  • 1 tsp. ground cloves
  • 1 tsp. powdered ginger
  • 2 tsp.  cinnamon
  • 1 tsp. salt
  • 1/3 c. extra sugar for rolling

To the melted cooled shortening add the sugar, molasses and eggs.  Beat well. 

In a separate bowl sift together the dry ingredients.

Add the dry to the wet ingredients, mixing with a spoon to incorporate.  Chill for at least an hour (can be made ahead, and baked the next day).

Preheat oven to 375º.  Using about a tablespoon of dough, form into balls. 

Roll balls in sugar and place on un-greased cookie sheets about 2 inches apart.

Bake for 8-10 minutes. 

Check after 8 minutes.  They should be flattened but still soft.  Remove and let cool for 1-2 minutes before removing from the pan.  They are fragile while hot.   

Joy's Oatmeal Cookies
  • 1 c. oil
  • 4 eggs
  • 3/4 c. brown sugar
  • 1/4 c. sour milk or buttermilk
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 3 c. oats
  • 1 c. raisins or chocolate chips mixed with coconut
  • 1/2 c. nuts

Bake 12-14 minutes at 350 degrees.

Joy's Nutmeg Cake
  • 1/4 c. butter
  • 1/4 c.  shortening
  • 11/2 c. sugar
  • 3 beaten eggs
  • 2 c. flour
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 2 tsp. ground nutmeg
  • 1 c.  buttermilk or milk soured with 1/2 tsp. vinegar
  • 1/2 tsp. vanilla extract

Cream the shortening, butter and sugar.

Add eggs and beat well. 

Add sifted dry ingredients alternately with combined buttermilk and vanilla.

Pour into an oblong pan.

Bake @ 350º for 25 minutes

 

Wizard Fred’s Waffles

Before you start,  have a mix of 1/2 chia and 1/2 flax seed in the fridge

cook 1/2 cup quinoa in 1 cup water for 15 minutes

add the following ingredients to cooked and cooled  quinoa.

1/3 thick cut oatmeal (harmony) ~ grind it

1/3 c nutiva hemp seed ~ grind slightly

1 c organic arrowhead buttermilk pancake mix

1/3 c *pre-mixed chia ‘n flax  – grind

1/4 c canola oil

2 eggs

1 c whole milk

Stir until well mixed
